An enzyme is a protein that acts as a catalyst for specific biochemical reaction, converting specific substrates into chemically distinct products. Enzyme activity assays quantify the kinetics of the product formation or substrate depletion in the reaction, which result in fluorescence, luminescence or colorimetric outputs.
